Surprise Zucchino!

It’s been raining for weeks.  When I went out into the garden I found this huge zucchino.  I just wasn’t expecting it.  We promptly turned it into dinner.

    Tasty! We already have had some sugar snap peas. And we have one eggplant starting to grow.. haha 🙂 No room for zucchini in the patio garden, but we’re getting some this week through the CSA. I have a feeling this is the beginning of a long line of zucchini. What did you make?

    This time we sliced in thin on the mandolin and put it in pasta (with sundried tomatoes, pine nuts and a little piccante). but you’re right about the long line of zucchini, we harvested four others this week too. Last night we did potatoes and zucchini with basil, which was good too – sliced everything on the mandolin (though if you have the slice option on your food processer, that would be quicker), sautèed it all together in a big frying pan with some water, a little oil, S&P, and basil. Added more chiffonaded basil at the end (I can’t get enough basil!)
    I hear you on the long line of vegetables, for the first time in my life I’m actually sick of artichokes- thank goodness the season is ending! Your CSA sounds awesome!

    Sounds yummy! I also really like zucchini with pesto so I bet that it’s good with the potatoes and basil. When we have like a ton of squash/zucchini, Oak cuts slices and grills them, then we make sandwiches out of them with pesto on them. So tasty. We’re growing this huge variety of basil this year.. the leaves are seriously like 8 inches long. It’s hot.

    Can you get cranberries in Italy?? There’s a really great zucchini bread with cranberries in it in Martha’s baking book. I always freeze a bag at Thanksgiving so I have them to make that recipe in the summer. 🙂
